Gluten Free Pancakes Recipe
gluten free all-purpose flour
baking powder, gluten free
BOOST® Original Nutritional drink, Very Vanilla
vanilla extract, gluten free

Combine gluten free flour and baking powder in a large bowl.
In a medium bowl, whisk together egg, BOOST® Original drink, lemon juice, vanilla extract, and vegetable oil. Pour into flour, stirring until just combined.
Let sit for 5-10 minutes.
Heat a nonstick frying pan over medium heat. Scoop 2-3 tbsp batter into the pan.
Cook for 3-4 minutes, or until the tops begin to form bubbles. Flip, and cook for an additional 2-3 minutes, or until golden.
Top with strawberries, sliced bananas, and Greek yogurt. (optional)
