Ingredients

1 cup

gluten free all-purpose flour

1 tbsp

baking powder, gluten free

1

egg

¾ cup

BOOST® Original Nutritional drink, Very Vanilla

1 tsp

lemon juice

1 tsp

vanilla extract, gluten free 

1 tbsp

vegetable oil

Butter

for cooking 

Directions

  1. Combine gluten free flour and baking powder in a large bowl. 

  1. In a medium bowl, whisk together egg, BOOST® Original drink, lemon juice, vanilla extract, and vegetable oil. Pour into flour, stirring until just combined. 

  1. Let sit for 5-10 minutes. 

  1. Heat a nonstick frying pan over medium heat. Scoop 2-3 tbsp batter into the pan. 

  1. Cook for 3-4 minutes, or until the tops begin to form bubbles. Flip, and cook for an additional 2-3 minutes, or until golden. 

  1. Top with strawberries, sliced bananas, and Greek yogurt. (optional)

  1. Enjoy!
