INGREDIENTS:
1 (18.25 oz.) package yellow cake mix
1 1/2 cups (1 1/2 bottles) BOOST® Nutritional Drink (Vanilla)
2 eggs
1 (11 oz.) can Mandarin oranges (drained)
1 cup crushed pineapple (drained (juice reserved))
1/2 cup almonds
3/4 cup powdered sugar
whipped topping (optional)
DIRECTIONS:
1. Preheat oven to 350° F.
2. Spray 9 x 13-inch pan with vegetable oil cooking spray.
3. Combine cake mix, BOOST Drink, and eggs in a large mixing bowl. Beat with electric mixer on medium speed for 2 minutes.
4. Stir in mandarin oranges and ½ cup pineapple.
5. Pour batter into pan. Sprinkle with almonds.
6. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Cool for 15 minutes on wire rack.
7. Combine powdered sugar and 2 tablespoons of the reserved pineapple juice in a small bowl. Mix until smooth.
8. Spread over warm cake.
9. Cool completely before serving.
10. Serve with whipped topping, if desired.
