INGREDIENTS:
8 (1 inch) slices French bread
4 eggs
1 1/2 cups (1 1/2 bottles) BOOST® Nutritional Drink (Vanilla)
1 Tbsp. sugar
1 1/2 tsp. vanilla
1/2 tsp. nutmeg
2 tart baking apples (peeled, cored and sliced)
1 Tbsp. butter (melted)
1 Tbsp. sugar
1 1/2 tsp. cinnamon
DIRECTIONS:
1. Preheat oven to 400° F. Spray an 8” x 8” square pan with nonstick cooking spray.
2. Arrange bread tightly in a single layer in bottom of pan.
3. Combine eggs, BOOST Drink, 1 Tbsp. sugar, vanilla and nutmeg in a mixing bowl and whisk until well blended. Pour half of the mixture over the bread.
4. Layer apple slices over bread.
5. Pour remaining egg mixture over apples. Drizzle with melted butter.
6. To make topping, stir together sugar and cinnamon until well blended.
7. Sprinkle evenly over apples.
8. Bake for 35-40 minutes or until set. (To test, place a butter knife in the center. French toast is done if knife comes out clean.)
9. Cool for 5 minutes before cutting and serving.
10. Serve warm with maple syrup.
